About the Winery: Founded by Aubert and Pamela de Villaine in Bouzeron and now led by Pierre de Benoist, Domaine de Villaine is an independent Côte Chalonnaise estate known for organic farming, careful cellar work, and wines that keep their vineyard character front and center.
About the Wine: This benchmark Bouzeron comes from 17 hillside parcels of old-vine Aligoté Doré, the smaller-yielding, more aromatic form of Aligoté. The certified-organic fruit is hand harvested and sorted, gently pressed, fermented in temperature-controlled tanks or oak tuns, and raised for approximately 10 to 12 months. The result is a white Burgundy with real texture, not merely a sharp little aperitif.
Tasting Notes: Citrus blossom, white peach, crisp apple, lemon zest, and fresh herbs lead into a bright, mouthwatering palate. Saline minerality and lively acidity give the finish impressive length and definition.

The palate is well balanced with a keen line of acidity and beautiful weight in the mouth, featuring hints of lemon curd, white peach and Anjou pear toward the poised finish. Serving Suggestion: Serve around 54°F with oysters, shellfish, grilled fish, goat cheese, Comté, or Parmesan. It is delicious now for its freshness and can continue developing for several years.
