Winemaker's Tasting Notes: The flagship white of the Gai’a portfolio, this wine is bone-dry with strong character: full-bodied, well-structured with crisp acidity, distinctive minerality and delicate honeysuckle aromas. This white wine will continue to evolve for 2-5 years, as the mineral notes soften the palate will develop more nuanced flavors of fruit and honey.

About the Wine: THALASSITIS is produced from Santorini’s indigenous white grape variety, Assyrtiko. All the Assyrtiko grapes selected for THALASSITIS originate exclusively from vineyards in the Episkopi, Akrotiri and Pyrgos regions. The vines in these regions are almost 80 years old. The particularly low yield that never exceeds 25 hl/ha combined with the local terrain and variety, result in an exuberant wine with a strong personality.

Serving Suggestion: A classic pairing for seafood, fatty fish, as well as poultry and even lamb stewed in lemon sauce.
