Tasting notes: "From a 1.5 hectare plot, planted in 1988. This is a very clear, pure expression of white and yellow peaches, lemons, some minerally gun flint and very subtle oak. Really dialed-in and focused on the nose. Similarly, the palate is tautly focused, yet has fully ripe flavors in the peach and lemon spectrum. It arcs smoothly into a composed, long and balanced finish. Chardonnay that’s resolved to this extent on release is a rare thing. Drink or hold. Screw cap."- James Suckling

"Sensitive and highly experienced winegrower Michael Dhillon turns out a Chardonnay of both delicacy and concentration that makes you feel like you're on vacation. There's a perfume of honeysuckle and jasmine lacing citrus and stone fruit, and a creamy, flinty underbelly. In the mouth it's slippery yet linear with purity of fruit and bright acidity. It's not overly rich nor is it skeletal; neither achingly cool nor old school traditional. It simply expresses the land from which it came, and for that is a complex and beautiful wine. About the Wine: The Kostas Rind Chardonnay is grown in a 1.5 hectare plot. The wine is fermented in French barrels of which typically 20% are new. Fermentation occurs without the addition of cultured yeast and the wine remains in barrel on yeast lees over winter with only a small amount of malo-lactic conversion taking place. It is racked around eight months after vintage, and returned to barrel for a further three months before bottling.  Production varies from 300-600 dozen per vintage.  This wine is dedicated to Kostas, a Lithuanian, who epitomized wisdom and humility. Kostas mentored Bill Darshan Singh Dhillon and later introduced him to the culture and celebration of fine wine. It was Kostas who foresaw that Bill would work on the land. The first Bindi wine, 1991 Chardonnay, was a tribute to Kostas and this wine, from the same volcanic and Ordovician soils planted in 1988, continues that acknowledgement.
